This is a decadent and creamy rice pudding recipe that you can serve either as a sweet breakfast or for dessert. Rice pudding is also a great way to use up all your leftover rice.
3/4 cup uncooked white rice
2 cups milk
1/3 cup white sugar
1/4 teaspoon salt
1 egg beaten
2/3 cup golden raisins
1 tablespoon butter
1/2 teaspoon vanilla extract
1. Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.
2. In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly.
3. Remove from heat and stir in butter and vanilla.
